The Trial If you have visited our cafe recently you may have noticed that we have changed our default milk from cow’s milk to oat milk. This is part of a three week trial we are conducting in collaboration with Tom Fox, a student researcher at The London Interdisciplinary School (LIS).
The trial will be running from 22nd April to 12th May during this time the default milk served in milk-based drinks will be oat milk. Cow’s milk, coconut milk and spelt milk will remain available throughout.
Why are we doing this? Coffee is generally a product with a high climate footprint1. We are conscious of this and have taken steps to reduce our impact. For example, we have recently had a batch of coffee beans delivered by sail ship and collected with our electric van.
However, alongside on-farm coffee production, the way in which we consume coffee leads to significantly higher emissions. In a milky coffee such as a latte (the nation’s favourite2) the emissions from the (cow’s) milk are greater than the entirety of the rest of the supply chain3.
Swapping out cow’s milk for oat milk considerably reduces the emissions of a milk-based drink4. The emissions of oat milk are 0.9kg compared to 3.15kg for cow’s milk. Oat milk also uses far less land and freshwater than cow’s milk.
Our milk As part of the trial, we wanted to elevate oat milk from an alternative for those that don’t consume dairy to a core ingredient for the perfect milk-based drink.
We tried many different oat milks and settled on MOMA Professional Barista, this blend compliments coffee very well.
MOMA make all of their oat milk in the UK using British oats with only 100 miles from farm to factory5. They are committed to supporting sustainable farming which makes their oat milk a fantastic option for this trial.
MOMA professional is also gluten-free which makes our new default milk accessible to both people who are intolerant to dairy or gluten and most people with coeliac disease. Read morehere.

The results We’ll be sharing the results with our customers, suppliers and the cafes we supply. Check back in on our website and social media channels to see when we release the results.
What happens after the trial? This is a limited trial, to learn about the effect of this type of change as well as any other benefits and drawbacks.
The results will be used to inform future efforts to decarbonise our operations. It will also feed into a growing field of research around the use of ‘nudges’ to improve sustainability.
